Boobie Berry Muffins

Ingredients

Strawberry compote
1 cup of cut strawberries
1 tbspoon of sugar
1 tsp water
Boil in a pot until reduced to a thick sauce
Put aside to cool
Muffins
2 cups of flour
1/2 cup of white sugar
2 tsp baking powder
1 heaped desert spoon of Lactation station Boobie Blend
White choc chips (optional)
2 eggs
3/4 cup of clean oil
1 tsp vanilla essence
1/2 cup of milk
Crème cheese
Method
Pre heat oven to 155 degrees
Put all dry ingredients into a large bowl add all wets (below) mixed previously
DO NOT OVER MIX, JUST MIX THROUGH
Line muffin tins with paper cups and fill half way with muffin mixture.  Put a little of the strawberry compote into each muffin and add half a teaspoon of cream cheese.
Fill the muffin tins with the remainder of the mixture and place in the preheated oven for about 18-20 minutes approx.
Tip: Check with a knife that the muffins have cooked by inserting into the middle of one muffin and the knife comes out clean.
Once muffins have cooled mix some cream cheese with icing sugar and a minute touch of boiling water. Mix to a thick consistency then pipe a swirl onto each one, put a half a fresh strawberry onto the icing then dust with icing sugar.
